The best ‘sweet dishes’ of the whole Hokkien cuisine are surely to be found in Xiamen. Though Xiamen people love sweet food, ‘sweet’ is not yet the best word for the city’s atmosphere. That word should be ‘satay’, which is a sauce that reconciles different tastes whilst echoing the tastes of life – sweet, sour, bitter, spicy and salty. Xiamen,a broad-minded city, mixes various new things with the
traditional, in the same way as the satay sauce does.
